WKTV - We are continuing to show you how you can make a meal for your entire family, with the cost that equals $5 or less per person. NEWSChannel 2's Megan Koskovich is In the Kitchen to make chicken fajitas with fresh salsa!
You will need some leftover chicken and some whole wheat tortillas for this as well, but any leftover grilled meat will do or enjoy without.
If using dried, soak overnight or soak during the day while your at work!
If using dried and you forgot to soak, then add 2 cups of water for each cup of dried beans, bring to a boil then reduce and simmer about 30 minutes until starting to soften. Drain.
Using a ration of 1 cup of beans to 2 cups of stock, now is time to simmer for and simmer until beans fully softened, adding your favorite seasonings at this point along with a tsp. or so of salt.
Seasonings can be cumin, a blend such as the North African blend Ras el Hanout
Once dried beans are soft from whatever starting point you chose, simmer beans with chicken stock.
Prepare your black beans and salsa ahead on a Sunday to enjoy for fast lunch or dinner during the week!
On a cookie sheet, place tortillas and top with black beans & chicken and bake or broil for 5 minutes at 350.
Slip tortillas on a plate, top with salsa and a sprinkle of Parmesan cheese, wrap and enjoy!
