In the Kitchen: Maple Teriyaki

Maple Teriyaki Stir-Fry

By: Chef Mike Cappelli of Leaf, Loaf & Ladle


2 Tbsp. Mill Hollow Maple Syrup

3 Tbsp. Mirin, Sake or Red Wine

2 Tbsp. Soy Sauce

1 Tbsp. Oil (peanut is best for stir fries as it has a high smoke point)

¼ Cup Thinly sliced onions

¼ Cup Thinly sliced carrots

¼ Cup Thinly sliced red peppers

¼ Cup Thinly sliced zucchini

½ tsp. Minced garlic

½ tsp. Minced ginger root

½ Cup packed baby spinach


1.) Heat oil in a sauté pan, when hot add garlic and ginger stirring for a minute or two;

2.) Immediately add hard vegetables (carrot, onion and red pepper), sautéing until it begins to soften (3 minutes);

3.) Add zucchini and saute another minute, last add the spinach, mirin, soy sauce and maple to incorporate.

4.) Serve over rice and garnish with green onion and cilantro. That was easy!
