Ginger-Garlic Wings with Lebanese yogurt dipping sauce
Ginger-Garlic Wings with Lebanese yogurt dipping sauce:
Yields: 1 lb chicken wings (usually yields 7-8 wings depending on size)
Marinade #1 Ingredients: (soaked in buttermilk for up to 2 hours)
2 - 3 cups buttermilk (however much it takes to fully immerse your wings for the first marinade, depends on the size bowl you are using and how many wings you have)
ground ginger - just enough to sprinkle on wings and rub to cleanse
Marinade #2 Ingredients: (marinated overnight, or minimum of 4 hours)
3 large garlic cloves, finely chopped (the pre-chopped garlic works best, has a stronger flavor, enough for 2 teaspoons chopped)
ground ginger, 4 teaspoons, plus 2 teaspoons for the spice rub
2 teaspoons fresh ginger, chopped *if have on hand, if not, add 1 extra tsp ground ginger
1/3 cup light sodium soy sauce
1/2 cup sesame oil
4 tbsp honey
Salt and pepper to taste
Yogurt sauce Ingredients:
2 cups plain yogurt (not Greek yogurt! Plain yogurt works best, full fat)
1/4 cup fresh mint, finely chopped
1 1/2 tsp all spice
1/8 tsp cayenne pepper (I have used up to 1/4 tsp as some of my friends prefer spicier sauces, all on taste)
Begin by cleaning the wings. Rub each wing with ground ginger, and run under luke warm water. Pat dry & place in medium bowl, cover with buttermilk and refrigerator and marinate for up to 2 hours, but no less than 1 hour.
Remove the wings from bowl and pat dry on paper towel lined plate. In a medium separate bowl combine soy sauce, sesame oil, fresh minced garlic, fresh ginger, 4 tsp ground ginger, honey and salt & pepper and whisk until combined. Meanwhile, rub the remaining 2 tsp ground ginger, salt, and pepper into the wings. Place wings in another clean, larger bowl, and pour the marinade onto them. Make sure to use a bowl shallow and narrow enough to submerge the wings. Marinate for min of 4 hours, and up to overnight.
As the wings marinate, prepare the yogurt sauce by chopping the fresh mint, and adding all spice, cayenne, salt and pepper to the plain yogurt in a small bowl. Mix well and refrigerate overnight.
Place wings in casserole baking dish to keep them close together, and bake the wings at 400F for 40mins up to 1 hour, depending on your oven and how many wings you have.
