HASH BROWN CASSEROLE

2 cups (8 ounces) regular or reduced-fat shredded cheddar cheese
8 eggs, beaten
1 1/4 cups milk
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 (30-ounce) package frozen shredded hash brown potatoes
1 small onion, chopped
1 small green bell pepper, chopped
1 1/2 cups chopped ham
Salsa (optional)

 

Preheat oven to 350 degrees. Coat a 9-inch x 13-inch baking dish with nonstick cooking spray. In a large bowl, combine cheese, eggs, milk, salt, and pepper. Add potatoes, onion, pepper, and ham; mix well. Pour mixture into prepared baking dish. Cover with foil. Bake 30 minutes. Uncover; bake an additional 35 to 40 minutes or until center is set. Let stand 10 minutes before serving. To serve, cut into squares; top with salsa, if desired. Makes 8 to 10 servings.
