1 1/2 cups plus 2 tablespoons sugar
1 1/2 teaspoons cinnamon
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1 cup butter flavored vegetable shortening
2 eggs

Preheat oven to 375 degrees. In a small bowl, combine 2 tablespoons sugar and cinnamon. In a medium bowl, combine flour, cream of tartar, baking soda, and salt. In a large bowl, beat shortening with an electric mixer on medium speed for 1 minute. Add the 1 1/2 cups sugar; beat until combined. Add eggs; beat until combined. Gradually beat in as much flour mixture as possible; stir in the rest. Shape dough into 1 1/4-inch balls. Roll in cinnamon-sugar mixture. Place 2 inches apart on ungreased cookie sheets. Bake until centers are almost set, 8 to 10 minutes. Remove immediately from cookie sheets to a wire rack. Makes about 4 dozen cookies.
