3 medium tomatoes, chopped 1 medium cucumber, peeled and chopped 1 medium scallion, thinly sliced 1 tablespoon chopped fresh flat-leaf parsley 1 tablespoon chopped fresh basil 2 tablespoons red wine vinegar 1/2 teaspoon salt 1/4 teaspoon pepper 2 tablespoons extra-virgin olive oil |

In a large bowl, combine tomatoes, cucumber, scallion, parsley, and basil. Add vinegar, salt, pepper, and oil; toss to combine. Cover, and refrigerate at least 1 hour. Makes 6 servings.
