Deer Meat Boning & Processing Industry Surges

Deer hunting is in full swing, which means the deer meat boning and processing industry is surging.

Mike Santino, of Chadwicks, runs a small business out of a backyard garage.  In an average season, he hand-bones and processes about 90 to 100 deer.

In case you may not know, boning is the process of taking the meat or venison off the bone of the deer.  In the case of Santino's business, it's all hand done with a hook and knife.

Santino tells NEWSChannel 2, when companies use machines to bone deer, often times, the band-saw will cut into the bone, leaving bone fragments in the meat.
