Easy, Skinny Cinco de Mayo Recipes

UTICA, N.Y.(WKTV) The 5th of may commemorates the Mexican Army's 1862 Victory over France in the battle of Puebla during the French and Mexican War. But the day has become more of a food and drink celebration here in the United States. Some recipes that won't break the belt:

Skinny Margarita
1/4 cup silver tequila
1 small lime, cut in half, juiced (2 to 3 tablespoons)
1 tablespoon triple sec or other orange-flavored liqueur
1 lime wedge
Step 1:
Fill glass with small ice cubes. Add tequila, lime juice, and orange liqueur. Stir to combine.
Step 2:
Garnish with lime wedge

Skinny Guacamole
4 large ripe avocados
(substitute 1 grated zucchini for two avocados)
1/4 cup minced red onion
2 jalapeno chilies, seeded
3-4 tablespoons fresh lime juice
1 teaspoon lime zest
1/2 teaspoon sea salt
3 tablespoons minced fresh cilantro
pinch of cayenne or ground aji amarillo
Cut the avocados in half, remove the pits and scoop the flesh.
Transfer to a large wooden or metal bowl.
Add salt and mash with the back of a wooden spoon until desired texture is reached.
Stir in remaining ingredients.
To keep for up to 3 hours, cover and store in the refrigerator.
Eat right away!
