WKTV - We're continuing to show you how to use locally made maple in savory and sweet dishes. NEWSChannel 2's Don Shipman goes in the kitchen to help make maple butternut squash soup.
Maple Butternut Squash Soup with Caramelized Onion & Sage
Janssen of Nola's in Clinton
2 onions sliced
2 Tbsp. Olive oil
½ cup maple syrup
3 + ½ cup diced butternut squash
½ cup sherry
24 oz. vegetable stock
12 oz. coconut milk
25 small sage leaves
Saute onions in olive oil until caramelized, stirring often for even caramelization, about 10 minutes.
Add maple syrup, stirring to coat the onions.
Add butternut squash, cooking another 3 minutes.
Add sherry, cook another 3 minutes.
Add vegetable stock and coconut milk and simmer until the squash is cooked through.
Add sage leaves, puree and serve!
