UTICA, N.Y. (WKTV) -- The Adirondack Distilling Company is unveiling the first legal bourbon in Central New York. Made with locally grown corn and water from the Adirondacks, it tastes just like Central New York too.
"We actually make it right in here. This is where the process starts. We mix corn and hot water, basically cooking starch and creating sugar from the corn," said Jordan Karp, master distiller at the Adirondack Distilling Company.
The mixture ferments for seven days before the alcohol is separated from the water.
"All we have is steam and water that's the only thing we control here. No computers tell us what to do. It's all by feel and experience," said Karp.
Before the bourbon is bottled it has to sit in wooden barrels. While many people complain about the constantly changing weather in Central New York, it actually plays a big role in making a big flavor.
"We actually like the weather in Central New York because the change in temperature is actually really important for bourbon because the wood will expand and contract and the spirit will go in and out of the wood," said Karp.
The Adirondack Distilling Company not only wants to get in on the growing global demand for bourbon, they want to stand out.
"Most other bourbons are not 100 percent corn we felt like, 'hey why not do 100 percent corn,' it's different, it will give a different profile in terms of flavor and it's also gluten free naturally, unlike most bourbons that have a little bit of wheat or rye or barley in them," he said.
A six-month labor of love turns into a smooth and sweet spirit and the distillers hope it matches up to their award-winning gin and vodka.
"We like to drink it so we hope other people like to drink it too," said Karp.
The first batch will be available at the Adirondack Distilling Company on Friday and it will be on store shelves sometime in July.
