MINI BANANA CHOCOLATE CHIP BREAD
Vegetable shortening, for pans
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups sugar
1/2 cup (1 stick) butter, softened
2 eggs
4 ripe medium bananas, mashed
1/2 cup buttermilk
1 teaspoon vanilla
3/4 cup miniature semisweet chocolate chips
Preheat oven to 350 degrees. Grease the bottoms of four 5x3-inch loaf pans with shortening. In a large bowl, combine flour, baking soda, and salt. In a separate, large bowl, combine sugar and butter. Beat with an electric mixer until well blended. Add eggs, bananas, buttermilk, and vanilla; beat until combined. Add to flour mixture; stir just until moistened. Stir in chocolate chips. Divide batter among prepared pans. Bake until a toothpick inserted in centers comes out clean, 35 to 40 minutes. Cool in pans 10 minutes before removing to a wire rack. Makes 4 miniature loaves.
