GUACAMOLE
2 large ripe avocados
1 tablespoon fresh lime juice
1 medium tomato, seeded and chopped
2 tablespoons chopped fresh cilantro (optional)
2 tablespoons minced red onion
1 garlic clove, minced
2 teaspoons minced jalapeño chili (optional)
Salt and pepper to taste
Tortilla chips (optional)
Halve and pit avocados. Scoop avocado flesh into a medium bowl and mash with a fork. Stir in lime juice, tomato, cilantro, onion, garlic, and jalapeño. Season with salt and pepper. Serve with tortilla chips, if desired. Makes 2 cups guacamole.
