NewsTalk: Harvest of the Month is cabbage

UTICA, N.Y. -- Brandon Benedict, the nutrition assistant/program educator for Cornell Cooperative Extension of Oneida County, joined Gary Liberatore for NewsTalk Friday on the Harvest of the Month.

Harvest of the Month:

•Cabbage is a cruciferous vegetable; along with broccoli, brussel sprouts, and cauliflower.
•More than 400 varieties of cabbage; most common are green, red, purple, and savoy.

What nutrition does cauliflower provide?

•Folate, vitamin C, vitamin K.
•Like any fruit or vegetable, gives us fiber.

Shopping Tips
•Look for firm cabbage heads
•Feel heavy for size
•Leaves tightly packed
•Store whole or cut cabbage in plastic bag in fridge
•Wash thoroughly, remove outer leaves, trim out core
Ways you can eat:
•Cook with other veggies of your choice and chicken for an entrée
•Use green and purple cabbage together to make a rainbow coleslaw
•Add cabbage to soups or stews

How much do I need?

•One cupped handful is about ½ cup
•According to and the dietary guidelines for Americans, make half of your plate fruits and veggies each day!
Fun Facts!
•Since cabbage has vitamin C, sailors would bring cabbages with them on voyages to avoid scurvy.
•California grows the most cabbage in the U.S.
•Middle ages, cabbage juice was used to heal wounds and as a cough remedy

•Whitesboro: Dunham Public Library, Friday Dec. 28 @ 10 a.m.

•Look for future classes in Herkimer, Oneida and Lewis. Dates for December and January will be on our website at the end of the month:
•Classes include a fun interactive nutrition presentation and usually followed by a food demonstration and tasting or a healthy food tool (such as a melon baller).
